No-Bake Pumpkin Protein Bites
Total Time: 10 Minutes
1 1/2 cup extra thick rolled oats (I used Bob Mill's GF oats)
1/2 cup almond butter
1/4 cup pumpkin
1/4 cup honey
1/4 cup ground flax seeds
2 tsp vanilla
2 tsp cinnamon
1/2 tsp ginger
1 tsp nutmeg
1/4 cup mini dark chocolate chips
OPTIONAL: 1/2 cup chocolate protein powder (I used NAKEY Whey)
OPTIONAL: 2 TBSP chia seeds
1. In a kitchen aid or mixing bowl, add oats, almond, butter, pumpkin, honey, flax seeds, chia seeds and protein powder.
2. After mixing well, add the rest of the ingredients and mix until completely combined.
3. Roll the batter into balls (1 TBSP for smaller size, 2 TBSP for a little bigger).
4. Store in a container and either refrigerate or freeze for future use.
